This Thanksgiving, bring a touch of wellness and gourmet flair to your table with this vegan gluten-free curried pumpkin soup. It’s more than just a dish; it’s a celebration of nourishment, gratitude, and the vibrant abundance of seasonal ingredients.
Recipe
Serves 25
Ingredients:
20 grs (1 T + 2 t) ginger, minced
725 grs (5 c) onions, diced
325 grs (2 1⁄2 c) carrots, diced
1⁄2 c + 1/8 c coconut oil
1 T + 2 t garlic, minced
15 c roasted pumpkin, mashed; (8 kilos of raw pumpkin that get salted and oiled before
roasting, recipe below) or from a can
10 c veg stock (+ 2c on the side to use if needed when blending)
7 1⁄2 c coconut cream
1/3 c butterscotch syrup, recipe listed down below
1 t + 1⁄4 t clove
1 T + 1/8 t cinnamon
2 t + 1/2 t curry powder
1 t + 1⁄4 t turmeric
1⁄2 t + 1/8 t nutmeg
1⁄2 t + 1/8 t black pepper
1⁄4 t + 1/16 t cayenne pepper
1 T + 1/2 T salt
10 bay leaves, remove before adding roasted pumpkin mash
Garnish:
roasted pumpkin seeds, recipe listed down below
1⁄2 t per person butterscotch syrup, recipe listed down below
Method:
Place a large pot on big burner, heat oil on Medium-high.
Sauté the garlic, ginger, onions and cover for 5 minutes.
Then, add spices and bay leaves, stir constantly and cook, on low heat uncovered, for 10 min.
Next, add in the carrots and cover for 3 min, making sure they steam cook before adding in any pumpkin.
Use tongs to REMOVE BAY LEAVES then add in all the roasted pumpkin to cook for another 2 min, covered.
Pour in the vegetable stock, turn heat down to Medium-Low, and cook for 30 min, covered, check that it is simmering.
Pour in the coconut cream and the soup portion of butterscotch syrup, stirring until both have been incorporated.
Lastly, ladle out 4 c batches of soup into the vitamix and blend on high for 30 secs (add 1/8 c of veg-stock to each round if needed, to become smoother). It should be slightly thick, but silky enough to pour as a soup. Pour blended batches into a warming pot and keep on low-heat until ready to serve.
ROASTED PUMPKIN
Ingredients:
8 kilos whole pumpkin, sliced into eights and seeds set aside to dry (Yielding: 15 c roasted meat)
1/2 c coconut oil
1 T fine salt
1/2 T black pepper (mix the salt and pepper together)
Roasting Method:
Preheat big oven to 190c. Paint 2 baking trays with 1 T of coconut oil. Cut the pumpkin into eighths. Arrange the pumpkin slices curving into each other to maximize space.
Pick up each piece and Paint each pumpkin slice with coconut oil, sprinkle salt + pepper onto the surface of the flesh, the replace back in same spot, flesh-down.
Bake for 45 min on the top-middle rack and bottom rack, rotate and flip for another 45 min.
The pumpkin should be slightly collapsed and the meat tender. Use a pairing knife to slice through the thickest section and feel how tender it is. The knife should slice through and out without resistance.
BUTTER-SCOTCH SYRUP
Ingredients:
190 grs (1 c) tapa dulce (jaggery/raw cane sugar)
1/4 c water
1/2 c coconut cream
4 t vanilla extract
1/2 t salt
Method:
In a small pot on small burner, combine all ingredients over High heat, whisk often until mixture comes to a boil, and whenever it bubbles, lift pot up from flame but continue whisking until bubbles subside then return to flame.
Continue this until reduced to 1 cup. Cool in a bowl until ready to serve.
Re-measure and set aside 1/4 c + 1 T for the soup, the rest is to garnish!
PUMPKIN SEEDS
Ingredients:
1 1⁄2 c pumpkin seeds
1 T + 1 t coconut oil
1⁄4 c + 1/8 c toasted coconut
1 t cinnamon
1⁄4 t nutmeg
Method:
Toast coconut flakes.
Choose a pan big enough to hold the seeds, and dry toast them for 2 min on High.
Add oil and stir until seeds are coated, about 1 min
Then add the spices and toast for 1 minute
Then add in toasted coconut flakes and mix.
Place seed mixture into a metal bowl to cool before garnishing.
TO SERVE SOUP:
Serve 2 large ladles into the bowl.
Each bowl gets: 1 1⁄2 T seed mixture, down the center line of the bowl + 1/2 t butterscotch, drizzled around the bowl + 4 dashes of cinnamon, sprinkled around the bowl + a pinch of nutmeg powder + 1/16 t FINE salt sprinkled, all around the bowl.
